Ingredients:
2 1/2 cup cooked rice
2 eggs, beaten
2 tbsp melted margarine
2 cup shredded cooked turkey
1/2 cup thinly sliced onion
l6 ounces chunky mild salsa
4 oz sliced black olives, drained
4 oz grated fat-free cheddar cheese
1/4 cup cilantro leaves, chopped
Instructions:
1. In medium bowl, combine rice, eggs and margarine. In large nonstick
skillet, over medium-high heat, cook until mixture starts to set, about 2
to 3 minutes. Do not stir. Reduce heat to low and cook until mixture looks
dry on the top, about 25 to 30 minutes.
2. Over top of egg mixture, layer turkey, onion, salsa, olives, cheese and
cilantro. Cover skillet and cook until cheese has melted, 10 to 12 minutes.
Serve immediately.
Makes 6 servings. Preparation time: About 15 minutes. Cooking time: About
37 to 45 minutes.
