Mexican Egg Recipes

Ingredients:

4 serrano peppers, stems removed, cho, pped
2 tbsp chopped onion
2 tbsp vegetable oil
2 small tomatoes, peeled and seeds re, moved, chopped
1 cup cooked nopales, cut into small stri, ps
1 tsp chopped fresh cilantro
6 eggs, well beaten
1 grated monterey jack cheese

Instructions:

Saute the chilis and onions in oil until soft. Add the tomatoes,
cactus and cilantro and simmer until moisture is absorbed. Add the
eggs to the mixture and sprinkle cheese on top. Cover and cook over
low heat until eggs are set. Heat Index = 5
