Mexican Vegetable Recipes

Ingredients:

1 lb potatoes, mashed, coarsely (4 large)
1/4 cup onion, diced
1 cup tomatoes, diced
1/2 tsp fresh ground black pepper, To taste
1/2 tsp hot chili pepper, to taste (1/2 to 1)
salt to taste
1 clove garlic, pressed or minced

Instructions:

Fry all ingredients, except potatoes, together for 5 minutes or until
they
are clear and tender.
You may add oil or butter to your taste. Add potatoes, fry until heated
through. Garnish with
shredded cheese.
