Ingredients:
2/3 cup chopped ripe tomato
1/3 cup chopped honeydew melon
1/3 cup chopped fresh pineapple or
1 8 oz. can crushed
1 pineapple, drained
1 tbsp finely chopped fresh
1 cilantro
3 tbsp fresh lime juice
1 tsp olive oil
1/4 tsp salt
Instructions:
In small bowl, combine all ingredients; mix well. Cover with plastic
wrap; let stand at room temperature 15 minutes. Serve as a relish for
grilled fish or meat. Makes 1 1/4 Cups
